Carob pudding

Ingredients:

For the base:

  • 1 cup of flour
  • 1/2 cup chopped nuts
  • 2/3 cups of sugar
  • 2 tablespoons of carob flour
  • 2 teaspoons of baking powder
  • 1/8 teaspoon of salt 1/2 cup of water
  • 2 tablespoons of olive oil
  • 2 teaspoons of vanilla

 

For the pudding:

  • 2/3 cups of sugar
  • 1/4 cup of carob powder
  • 1 and 3/4 cups of hot water

 

Preparation Instructions:

  1. Preheat the oven to 175 degrees Celsius. Put a bit of oil in a cake form and leave it for later. In a medium-sized bowl, mix the flour, nuts, sugar, honey, baking powder and salt together.
  2. Add the water, olive oil and vanilla and stir until the mixture is ready.
  3. Put the mixture in the mold in a small bowl. Mix the sugar and carob powder and sprinkle the whole mixture. Carefully pour over the hotmixture. DO NOT STIR.
  4. Bake it for 40 minutes.
