Our carob syrup is produced from the pods of the carob tree and has a mild, sweet flavor. It can be used as sweetener in cakes, tahini, hot and cold beverages, yogurt, ice cream and rice. It is a great substitute of sugar. Carob honey is also known as a traditional medicine for cough and sore throat. It is rich in calcium (almost three times more than milk- carob contains 350 mg per 100gr in comparison to milk that contains 120 mg per 100gr). Its flavor can differ depending on the variety without altering its nutritional value. For its production, only Cretan carobs are used.
It is consumed raw as a fruit. Be careful with the hard pods.

Carob powder can substitute cacao or chocolate. It is a natural sweetener rich in calcium, phosphorus, potassium, carbohydrates, protein, magnesium, vitamin A, B and D, and various metals. It is of ahigher nutritional value than chocolate and contains less than half of cacao’s fat.
For a chocolate beverage, replace 2 scoops of chocolate with 3 scoops of carob powder. For cacao, replace it with equal quantity of carob powder. It can also be used in sweets, cakes, pastries, drinks and milkshakes like cocoa. As it is a natural sweetener it requires less additional sugar. Alternatively, you can use carob syrup instead of sugar.

Locust bean gum is a structural polysaccharide found in the walls of fruits and vegetables (ie in the skin) but also in the kernel (seed). Pectin is a white or slightly dark powder that under suitable conditions can form a gelatinous mass. Carob pectin is derived from the locust bean, the locust bean fruit, and specifically from the endosperm of the locust bean seed. Locust bean pectin is completely plant-based, unlike commercial gelatin derived from animal collagen, and does not contain gluten and sugars. It is also hypoallergenic and suitable for everyone.
